Following your Gut and Menu Planning

Y’all…. it’s been a while. I keep thinking every Sunday “this is the week I’m going to get it all together.” I think it’s finally sinking it that I may not ever get it together. I’m always feeling a day late and a dollar short. This morning, I’m sitting down with my trusty Emily Ley planner and trying to do a better job of scheduling my life… work, blog posts, etc. We’ll see how that goes. Do you have any tips on getting it “all” done? If so, throw them my way. I need them!

Also, just a reminder – follow your gut. Even on the small things. We had friends stay the night on Friday night. I had an idea to do the lavash flat bread pizzas… everyone could make their pizza how they wanted. It’s an easy and quick recipe. But, after talking with someone else in my household (ha!), we decided on baked fish and chips. I had to double the recipe and it turned out awful. Soggy fish and chips. Gross. I should have just gone with the make your own pizzas. They would have been better and I would have spent less time in the kitchen and more time hanging out. So… follow your gut. Even on the small things.

Ok,  it’s very late, but here is our menu for this week. These are all meals you can make under 30 minutes.

Sunday: Mini Bell Pepper Loaded Nachos
I plan on being super lazy today and watching football so these easy nachos are a good fit. I’ll get tortilla chips for the kids. And use the leftover tortilla chips for….

Monday: Tortilla Crusted Chicken Tenders with Southwest Black Bean Salad
This is new for us. I’ll let you know how it is.

Tuesday: Chicken Salad. I have frozen shredded chicken that I plan to thaw and use for chicken salad. I’m literally just throwing in whatever we have in it – celery, grapes, walnuts. Who knows!? I also will sub plain fat-free greek yogurt for mayo. I promise you can’t tell the difference!

Wednesday: Instant Pot Chicken Soup for My Soul 
I’m pretending it actually feels like fall so we are eating soup!

Thursday: Our standard go-to Turkey Burgers with Zucchini
The kids don’t have school on Friday and J is off so Thursday night is the kick-off to our weekend! I’m hoping the weather will cooperate and the mosquitoes somehow magically die so we can enjoy an evening outside grilling.

Friday: J and I are getting fancy and going out to celebrate the Alley Theatre. You can find out more about the event here!
